Double Stuffed Mac 'n Cheese

Ingredients


• 4 oz. Southern Recipe Small Batch Sea Salt & Cracked Black Pepper Pork Rinds, crushed

• 3 cups Mac and cheese, premade

• 12 Large pasta shells, cooked al dente

• 2 Eggs

• 1/2 cup Milk

• 2 cups Panko breadcrumbs

• 1 cup Parmesan cheese, grated

• 1 cup All-purpose flour

• Oil, for frying



Directions


1. Cook large pasta shells al dente, drain, and allow to cool.

2. Prepare mac and cheese and let cool completely.

3. Preheat oil in a deep fryer or heavy-bottomed pot to 375°F.

4. In a shallow dish, mix crushed pork rinds, Parmesan cheese, and panko breadcrumbs.

5. In a bowl, whisk eggs and milk to create an egg wash.

6. Stuff each pasta shell with mac and cheese.

7. Roll each shell in flour, dip into the egg wash, then coat generously in the pork rind mixture.

8. Carefully lower each stuffed shell into the hot oil using a spoon or tongs.

9. Fry until golden brown, about 2 minutes. Remove and drain on paper towels.

10. Serve hot with your favorite dipping sauce.
