Greek Pork Rind Nachos

Ingredients
• 1 Bag Southern Recipe Small Batch Sea Salt & Cracked Black Pepper pork rinds
• 1 cup Tomatoes, cherry, chopped
• 1 cup Feta cheese, crumbled
• 1/2 cup Cucumber, diced
• 1/2 cup Onion, diced
• 1/4 cup Olives, kalamata, diced
• 1/4 cup Mint, fresh, chopped
• 1 cup Yogurt
• 1 Lemon, juiced
Directions
1. Place pork rinds on a serving dish as the base.
2. Layer tomatoes, onion, cucumber, and olives over pork rinds.
3. Top with feta cheese and yogurt.
4. Finish with mint and fresh lemon juice.
