Pork Rind Pepper Pizza Poppers

Ingredients
• 1/4 cup Southern Recipe Small Batch Spicy Dill pork rinds, crushed
• 10-12 Peppers, mini bell, halved lengthwise, deseeded
• 8 oz. Cream cheese, softened
• 3/4 cup Colby Jack cheese, shredded, divided
• 1/4 cup Pizza sauce
• 2/3 cup Pepperoni, mini
• 2 Tbsp. Basil, dried
Directions
1. Preheat oven to 450°F. Line a cookie sheet with parchment paper.
2. Place bell peppers cut side up on prepared sheet.
3. In a bowl, mix cream cheese, 1/2 cup Colby Jack cheese, basil, pizza sauce, and pepperoni until combined.
4. In a small bowl, mix remaining 1/4 cup Colby Jack cheese with pork rinds.
5. Fill each pepper half with cream cheese mixture.
6. Sprinkle pork rind mixture on top of peppers.
7. Bake 15 minutes, until tops are golden brown and bubbly.
