1/4 cup Southern Recipe Small Batch Spicy Dill pork rinds
10-12 Mini bell peppers, sliced in half lengthwise and deseeded
8 oz. Cream cheese, softened
3/4 cup Colby jack cheese, shredded and divided
1/4 cup Pizza sauce
2/3 cup Mini pepperoni
2 Tbsp. Dried basil
Preheat oven to 450 °F.
Line a cookie sheet with parchment paper.
Place the mini bell peppers, cut side up, on the parchment paper.
In a medium-sized bowl, mix the cream cheese, ½ cup shredded cheese, basil, pizza sauce, and mini pepperoni until well combined. Set aside.
In a small bowl, mix together the rest of the shredded cheese with the pork rinds. Set aside.
Fill each mini bell pepper half with the cream cheese pizza mixture.
Sprinkle the pork rind/ cheese mixture on top of each finished mini bell pepper, and bake in the oven for 15 minutes or until the tops are bubbly and golden brown. Enjoy!
