Thai Salad with Pork Rinds

You'll become a Thai-hard fan of this dish. How could you not be? All the veggies mixed in that sweet sauce and topped with flavorful pork rinds. Yep, we’re all in!

Ingredients
• 2 oz. Southern Recipe Small Batch Pork Rinds
• 1/2 cup Mint leaves
• 1/2 cup Cilantro leaves
• 1 cup Mung bean sprouts, trimmed and washed
• 2 Scallions, thinly sliced
• 1 tsp. Garlic powder
• 1 Roma tomato, thinly sliced
• 1 Red onion, thinly sliced
• 1 Tbsp. Keto-friendly almond sauce
Directions
1. **Soak the Onions:**
Place sliced onion and scallions in a bowl of cold water. Let sit for at least 5 minutes to mellow the flavor.
2. **Mix the Salad:**
In a large bowl, combine mint, cilantro, mung bean sprouts, garlic powder, tomato, and drained onions.
Add almond sauce and toss gently until everything is well coated.
3. **Add Crunch and Serve:**
Top with Southern Recipe Small Batch Pork Rinds just before serving for the perfect crispy finish.
