Ahi Poke Guac with Pork Rinds

Ingredients
• 1/4 cup Southern Recipe Small Batch pork rinds, crushed
• 3/4 cup Tuna, ahi, sushi grade
• 2 Tbsp. Lime juice
• 1 Tbsp. Sesame oil
• 1 Tbsp. Ponzu sauce
• 8 oz. Guacamole
• Sea salt, to taste
• Cilantro, garnish
Directions
1. In a bowl, mix tuna with lime juice, sesame oil, ponzu sauce, and sea salt.
2. Fill individual serving dishes with guacamole.
3. Divide seasoned tuna evenly between dishes.
4. Top with crushed pork rinds and garnish with cilantro.
5. Serve immediately.
