Apple Cinnamon Fritters

Ingredients:
• 1/2 cup Southern Recipe Small Batch Apple Cinnamon pork rinds, crushed
• 1 cup Flour, all-purpose
• 1/4 cup Sugar, dark brown
• 2 1/2 tsp. Baking powder
• 1 tsp. Salt
• 1 tsp. Cinnamon
• 2 Eggs, beaten
• 2 tsp. Vanilla extract
• 2 Apples, diced
• 2 Tbsp. Butter, melted
• 1–2 Tbsp. Lemon juice
• Powdered sugar
Directions:
1. Preheat air fryer to 350°F.
2. In a medium-sized bowl, mix the Apples, Butter, and Lemon juice. Set aside.
3. In a large bowl, mix the crushed pork rinds, Flour, Sugar, Baking powder, Salt, and Cinnamon. Set aside.
4. In a small bowl, combine the Eggs and Vanilla extract until well combined. Pour this mixture over the diced Apples. Mix until fully combined.
5. Pour the apple mixture into the flour mixture, and mix thoroughly.
6. Place heaping spoonfuls of the apple fritter mixture into the greased air fryer.
7. Cook for 5–10 minutes or until golden brown.
8. Serve with a simple powdered sugar glaze and a dusting of powdered sugar.
