1 bag. Southern Recipe Small Batch Pork Rinds for dipping the salsa
1/4 Fresh pineapple, cored and cut in pieces
1 avocado, diced
2 scallions, thinly sliced
6 cherry tomatoes, sliced in half
3 jalapeños, seeded and diced
1 cup black beans, rinsed
3 Tbsp lime Juice
1/2 cup. cilantro, chopped
1/2 tsp. salt
In a large bowl, mix together the pineapple, salt, jalapeños, black beans, scallions and lime juice.
Gently mix in tomatoes, avocado and cilantro.
