You'll forget all about the bun when you whip up our savory twist on the classic BLT. Plus, swapping pork rinds for flour makes the waffle gluten-free, keto-friendly and delicious!
Ingredients:
Waffle Batter
1 cup Southern Recipe Small Batch Cracked Black Pepper and Sea Salt Pork Rinds, finely crushed
3 Tbsp. heavy cream
2 eggs
3-4 tbsp water
Basil Mayonnaise
1/2 cup gluten-free mayonnaise
Handful basil leaves, chopped
1 tsp garlic, minced
Pinch of pepper
Toppings
1 large tomato
4 pieces lettuce
Directions:
In a large bowl, combine all of the batter ingredients until smooth. Pour the batter into a heated waffle iron, and cook until golden brown.
In a small bowl, combine the basil mayonnaise ingredients, and stir until combined.
Spoon a heaping tablespoon of basil mayo onto each waffle. Top one waffle with lettuce leaves and at least 2 tomato slices.
Top the sandwich with the other waffle, mayonnaise side down. Enjoy!
