BLT Waffle Sandwich

You'll forget all about the bun when you whip up our savory twist on the classic BLT. Plus, swapping pork rinds for flour makes the waffle gluten-free, keto-friendly and delicious!

BLT Waffle Sandwich - Southern Recipe Small Batch

Ingredients:


Waffle Batter

  • 1 cup Southern Recipe Small Batch Cracked Black Pepper and Sea Salt Pork Rinds, finely crushed

  • 3 Tbsp. heavy cream

  • 2 eggs

  • 3-4 tbsp water

Basil Mayonnaise

  • 1/2 cup gluten-free mayonnaise

  • Handful basil leaves, chopped

  • 1 tsp garlic, minced

  • Pinch of pepper

Toppings

  • 1 large tomato

  • 4 pieces lettuce

Directions:

  1. In a large bowl, combine all of the batter ingredients until smooth. Pour the batter into a heated waffle iron, and cook until golden brown.

  2. In a small bowl, combine the basil mayonnaise ingredients, and stir until combined.

  3. Spoon a heaping tablespoon of basil mayo onto each waffle. Top one waffle with lettuce leaves and at least 2 tomato slices.

  4. Top the sandwich with the other waffle, mayonnaise side down. Enjoy!
