BLT Waffle Sandwich

You'll forget all about the bun when you whip up our savory twist on the classic BLT. Plus, swapping pork rinds for flour makes the waffle gluten-free, keto-friendly and delicious!

Ingredients
Waffle Batter
• 1 cup Southern Recipe Small Batch Sea Salt & Cracked Black Pepper Pork Rinds, finely crushed
• 3 Tbsp. Heavy cream
• 2 Eggs
• 3–4 Tbsp. Water
Basil Mayonnaise
• 1/2 cup Gluten-free mayonnaise
• Handful of Basil leaves, chopped
• 1 tsp. Garlic, minced
• Pinch of Black pepper
Toppings
• 1 Large tomato, sliced
• 4 Lettuce leaves
Directions
1. In a large bowl, combine all waffle batter ingredients until smooth.
2. Pour batter into a heated waffle iron and cook until golden brown.
3. In a small bowl, mix together the basil mayonnaise ingredients until well combined.
4. Spread a heaping tablespoon of basil mayo onto each waffle.
5. Top one waffle with lettuce and tomato slices, then place a second waffle on top, mayo side down.
6. Serve immediately and enjoy!
