1 cup Southern Recipe Small Batch Cracked Black Pepper and Sea Salt Pork Rinds, finely crushed
3 Tbsp Heavy cream
3-4 Tbsp Water
1/2 cup Gluten-free mayonnaise
Handful basil leaves, chopped
1 tsp Garlic, minced
Pinch of pepper
1 large Tomato
In a large bowl, combine all of the batter ingredients until smooth. Pour the batter into a heated waffle iron, and cook until golden brown.
In a small bowl, combine the basil mayonnaise ingredients, and stir until combined.
Spoon a heaping tablespoon of basil mayo onto each waffle. Top one waffle with lettuce leaves and at least 2 tomato slices.
Top the sandwich with the other waffle, mayonnaise side down. Enjoy!
