Cheeseburger Quiche with Pork Rinds

Ingredients
• 1 cup Southern Recipe Small Batch Spicy Dill Pork Rinds, crumbled
• ½ lb Ground beef
• ½ tsp Black pepper
• 4 Tbsp Yellow mustard
• 1 cup Fresh spinach, torn
• 3 Green onions, chopped
• ½ cup Cheddar cheese, shredded
• 8–10 Avocado slices
• 1 Tbsp Avocado or olive oil
• 4 Large eggs
• 1 cup Heavy cream
Directions
1. **Preheat** oven to 375°F. Lightly oil a pie pan with avocado or olive oil.
2. **Whisk the custard:** In a bowl, combine the eggs and ½ cup of the heavy cream until smooth. Set aside.
3. **Cook the beef:** In a skillet, brown the ground beef with black pepper and yellow mustard. Stir occasionally until fully cooked, then remove from heat.
4. **Assemble the base:** Stir the spinach and green onions into the warm beef mixture. Transfer to the prepared pie pan, spreading evenly.
5. **Layer the flavors:** Sprinkle half of the pork rind crumbles and all of the cheddar cheese over the beef mixture. Arrange avocado slices evenly so each portion will have one.
6. **Add the custard:** Pour the egg and cream mixture evenly over the filling. Top with the remaining pork rind crumbles.
7. **Bake** for 35 minutes, or until the center is set (it shouldn’t jiggle when moved).
8. **Cool & serve:** Let rest for 10 minutes before slicing. Enjoy warm or chilled.
