Cranberry Bliss Bars

Ingredients:


For the Bars:

  • 1/2 cup Southern Recipe Small Batch Cranberry Jalapeno pork rinds, crushed

  • ½ cup all purpose Flour

  • ¾ cup Brown sugar

  • 1 stick Butter, divided

  • 1 Egg

  • 1 teaspoon Vanilla extract

  • 1/3 cup Dried Cranberries


For the Icing:

  • 4 oz. Cream cheese, softened 

  • 2 tablespoons Butter, softened

  • 1 cup Powdered sugar

  • ¼ cup White chocolate chips, melted

  • ¼ cup Dried cranberries


Directions:


  1. Preheat oven to 350 degrees F. 

  2. In a large bowl, mix the crushed pork rinds, all-purpose flour, and brown sugar.

  3. Mix in the egg, ½ stick of butter, vanilla extract and dried cranberries until smooth.

  4. Press the batter into greased 8x8 casserole dish.

  5. Bake for 20 minutes or until the bars are golden brown.

  6. Using a medium bowl, combine all of the icing ingredients (except the dried cranberries) until smooth.

  7. Once the bars are fully baked and slightly cool, spread the icing on top, in one even layer. 

  8. Sprinkle the dried cranberries, extra white chocolate chips, and extra crushed pork rinds on top (optional). Slice and enjoy!
