Egg Marsala Scramble

Ingredients
• 2 Tbsp. Southern Recipe Small Batch Sea Salt & Cracked Black Pepper pork rinds, crushed
• 3 Tbsp. Butter
• 8 Eggs, beaten
• 2 cups Cheddar cheese, shredded
• 1 Onion, chopped
• 1/2 cup Tomatoes, cherry, quartered
• 1/4 cup Peppers, green, diced
• 1 Tbsp. Ginger paste
• 1 Tbsp. Garlic, minced
• 1 tsp. Cumin
• Salt, to taste
• Cilantro, to taste
• Lime wedges, garnish
• Radishes, sliced, garnish
Directions
1. In a large skillet, melt butter over medium heat. Sauté onion and garlic until softened.
2. Add tomatoes and green peppers. Cook 3 minutes, until softened.
3. Stir in cumin, ginger paste, and salt.
4. Pour beaten eggs into skillet. Let rest 4 minutes without stirring.
5. Gently stir eggs until fully cooked.
6. Remove from heat. Sprinkle with cheddar cheese and stir until melted.
7. Garnish with cilantro, radishes, lime wedges, and crushed pork rinds. Adjust salt to taste.
