Hot Chicken & Waffle Sliders

Keto Cauli Tots

Ingredients


• 1/2 cup Southern Recipe Small Batch Pineapple & Ancho Pork Rinds, crushed

• 2 Chicken breasts, skinless

• 6 Keto waffles, cut into quarters

• 2 Eggs

• 1/2 cup Heavy cream

• 1/2 cup Almond flour

• 1 Tbsp. Hot sauce

• 2 Tbsp. Cayenne pepper

• 1/2 tsp. Garlic powder

• 1/2 tsp. Keto brown sugar

• 1/2 tsp. Chili powder

• 1 tsp. Paprika

• 1/2 cup Avocado oil, warm

• Pickles, for garnish



Directions


1. In one bowl, whisk eggs, heavy cream, and hot sauce. In another, combine pork rinds and almond flour.

2. Cut chicken into 4-inch pieces (similar in size to waffle quarters). Pat dry with paper towels.

3. Preheat air fryer to 325 °F.

4. Coat chicken in pork rind mixture, dip into egg mixture, then coat again in pork rind mixture. Place in air fryer. Repeat until all chicken is coated.

5. Air fry until golden brown and cooked through.

6. In a bowl, combine cayenne, chili powder, garlic powder, brown sugar, paprika, and warm avocado oil. Stir well, then brush over fried chicken.

7. Warm waffles. Top each with a piece of chicken and garnish with pickles.
