Ingredients
• 1/2 cup Southern Recipe Small Batch Pork Rinds, crushed
• 1/2 cup Cauliflower rice
• 1/2 cup Onion, diced
• 1/2 cup Mozzarella cheese, shredded
• 2 Tbsp. Chives, chopped
• 2 Eggs
• 1 tsp. Garlic powder
• 1 cup Parmesan cheese, grated
Directions
1. Preheat oven to 375°F. Line a baking sheet with parchment paper.
2. In a large bowl, mix together all ingredients until thoroughly combined.
3. Form the mixture into small, bite-sized balls and place them evenly on the prepared baking sheet.
4. Sprinkle additional Parmesan cheese on top of each ball for a crispy finish.
5. Bake for 18 minutes, flipping halfway through, until golden brown and firm.
6. Serve warm and enjoy!
