Keto Cheesecake Cupcakes

Keto Cauli Tots

Ingredients


Crust


• 4 cups Southern Recipe Small Batch Pork Rinds, crushed

• 1/4 tsp. Ground cloves

• 1 tsp. Cinnamon

• 4 Tbsp. Butter, melted

• 2 cups Keto-friendly sweetener


Filling


• 1 1/4 cups Powdered sugar substitute

• 2 Tbsp. Lemon juice

• 1 tsp. Vanilla extract

• 3 Eggs

• 2 lbs. Cream cheese, softened


Directions


1. Mix crushed pork rinds, ground cloves, cinnamon, sweetener, and butter.

2. Press pork rind mixture into lined and/or greased cupcake tins.

3. Refrigerate cupcakes while making cheesecake filling.

4. In a new bowl, mix powdered sugar substitute, lemon juice, eggs, and vanilla extract until well combined.

5. Add softened cream cheese to filling and mix vigorously until smooth.

6. Fill chilled cupcake cups with cheesecake filling.

7. Bake at 350°F for 12–15 minutes, center will be jiggly.

8. Return to the refrigerator for at least 30 minutes until set.
