4 cups Southern Recipe Small Batch Pork Rinds, crushed
1/4 tsp. Ground cloves
1 tsp. Cinnamon
4 Tbsp. Butter, melted
2 cups Granulated keto-friendly sweetener
1 1/4 cups Powdered sugar substitute
2 Tbsp. Lemon juice
1 tsp. Vanilla extract
2 lbs. Cream cheese, softened
Mix crushed pork rinds, spices, sweetener, and butter.
Press pork rind mix into lined and/or greased cupcake tins.
Refrigerate cupcakes while making cheesecake filling.
In a new bowl, mix powdered sugar substitute, lemon juice, eggs, vanilla extract, and mix well.
Add softened cream cheese to filling and mix vigorously until smooth.
Fill chilled cupcake cups with cheesecake filling.
Return to the refrigerator for at least 30 minutes until set.
