Keto Loaded Cauliflower

All the bacon-y, cheesy, flavorful goodness topped with a BOLD and generous layer of your favorite pork rinds is this recipe's success.

Keto Loaded Mashed Cauliflower with Pork Rind Crust


  • 2 cups Southern Recipe Small Batch Pork Rinds, crushed

  • 1 cauliflower

  • 4 oz. sour cream

  • 2 slices of bacon, crumbled

  • 2 tbsp. chives

  • 2.5 cups cheddar, shredded

  • 1/4 tsp. garlic powder


  1. Wash, steam, and mash the cauliflower.

  2. Mix in sour cream, crumbled bacon, 2 cups of cheddar cheese and chives. Stir well.

  3. Add garlic powder and continue mixing.

  4. Fill casserole dish with mixture, top with remaining cheddar and crushed pork rinds.

  5. Place under broiler under cheese is melted.
