Ingredients


• 3/4 cup Southern Recipe Small Batch Pork Rinds, crushed

• 1 1/2 cups Mozzarella cheese, shredded

• 2 oz. Cream cheese

• 1 Egg

• 1/2 lb. Roast beef, cooked

• 1 cup White cheese sauce

• 1/2 Green pepper, sliced

• 1/2 Red pepper, sliced

• 1/2 Onion, sliced

• 1/2 tsp. Salt



Directions


1. In a skillet over medium heat, sauté onions and peppers until softened. Set aside.

2. In a microwave-safe bowl, combine mozzarella and cream cheese. Microwave for 45 seconds, then stir until smooth. Let cool slightly.

3. Add egg and crushed pork rinds to the cheese mixture. Mix until a soft dough forms.

4. Roll dough into 2-inch balls and place between two sheets of wax paper. Press each ball flat into a disc.

5. Place a small portion of roast beef, sautéed peppers and onions, and 1 Tbsp. of white cheese sauce in the center of each disc.

6. Fold dough over to form a dumpling and press edges closed with a fork.

7. Heat oil in a deep skillet to 350°F. Fry dumplings until golden brown, turning as needed for even cooking.

8. Remove and drain on paper towels before serving.
