Keto Pizza Pork Rind Crust Bites

Did you just say keto pizza? Yes, we did. Pork rinds have saved the day once again with a low-carb meal that'll shake up the typical pizza party.

Ingredients
• 1 cup Southern Recipe Small Batch Pork Rinds, crushed
• 8 oz. Cream cheese, softened
• 4 Eggs
• 1/4 cup Parmesan cheese, grated
• 2 cups Italian cheese, shredded
• 1/2 Tbsp. Italian seasoning
• 1/2 Tbsp. Garlic powder
• 1/2 lb. Ham, thinly diced
• 1/2 Pineapple, thinly diced (omit for keto-friendly diets)
Directions
1. Preheat oven to 425°F. Grease a muffin tin and set aside.
2. In a large bowl, combine cream cheese, eggs, Italian seasoning, garlic powder, and Italian cheese.
3. Add crushed pork rinds and mix until a thick dough forms.
4. Press the dough evenly into the greased muffin tin to form mini pizza bases.
5. Bake for 20 minutes, then remove from oven and let stand for 10 minutes.
6. Top each pizza with diced ham and pineapple (optional).
7. Return to a 400°F oven and bake until the cheese is melted and bubbly.
8. Allow to cool slightly before serving.
