Did you just say keto pizza? Yes, we did. Pork rinds have saved the day once again with a low carb meal that'll shake up the typical pizza party.
1 cup Southern Recipe Small Batch Pork Rinds, crushed
8 oz. cream cheese, softened
4 large eggs
1⁄4 cup Parmesan cheese
2 cups Italian cheese, shredded
1⁄2 Tbsp. Italian spices
1⁄2 Tbsp. garlic powder
1/2 lb. ham, thinly diced
1/2 pineapple, thinly diced (remove for keto-friendly diets)
Preheat oven to 425°F.
Combine cream cheese, eggs, seasonings, and Italian cheese. Add ground pork rinds and mix well.
Use hands to press dough into greased muffin tin.
Bake for 20 minutes. Remove from oven and let stand 10 minutes.

Remove from oven and allow to cool before serving.
