Keto Pumpkin Muffins

Ingredients
• 1/2 cup Southern Recipe Small Batch pork rinds, crushed
• 3/4 cup Pumpkin puree
• 1/2 cup Butter, melted
• 4 Eggs, beaten
• 2/3 cup Erythritol sweetener
• 1 1/2 cups Almond flour
• 4 tsp. Baking powder
• 1/2 tsp. Nutmeg
• 1/2 tsp. Salt
• 1 tsp. Vanilla extract
Directions
1. Preheat oven to 350°F.
2. In a large bowl, mix pumpkin puree, butter, eggs, and erythritol until combined.
3. Add pork rinds, almond flour, baking powder, nutmeg, salt, and vanilla extract. Stir until mixed.
4. Fill a greased muffin tin with batter.
5. Bake 30 minutes, or until golden brown.
