Lemon Herb Goat Cheese Roll

Ingredients
• 1/4 cup Southern Recipe Small Batch pork rinds, crushed
• 1/2 cup Pecans, chopped
• 11 oz. Goat cheese
• 2 Tbsp. Parsley, finely chopped
• 2 Tbsp. Chives, finely chopped
• 2 Tbsp. Rosemary, finely chopped
• 2 Tbsp. Lemon zest
• 2 tsp. Garlic, minced
• 1/2 tsp. Salt
• 1/2 tsp. Black pepper
Directions
1. In a bowl, combine goat cheese, parsley, chives, rosemary, lemon zest, garlic, salt, and black pepper. Mix until creamy.
2. Place foil, parchment, or plastic wrap on a flat surface. Scoop goat cheese mixture onto one side and roll into a log.
3. Refrigerate at least 30 minutes, or overnight.
4. In a shallow dish, mix pork rinds and pecans.
5. Remove goat cheese log from wrap. Roll gently in pork rind mixture until fully coated.
6. Slice and serve with crackers or pork rinds.
