Bite-Sized Pork Rind Baked Potatoes

Mini Baked Potato


  • 1/4 cup Southern Recipe Small Batch Pork Rinds, crushed

  • 1 bag Baby potatoes

  • 2 Tbsp. Olive oil

  • Salt & pepper, to taste

  • 1/2 cup Sour cream

  • 1/4 cup Scallions, finely diced


  1. Preheat oven or air fryer to 425 °F.

  2. Prepare baby potatoes by drizzling them with olive oil, salt and pepper.

  3. Place into the oven on a baking sheet (or place in the air fryer) for 30-40 minutes, or until the mini potatoes are crispy and cooked through.

  4. Once cooled, make a slit on the top of each mini potato with a small knife.

  5. Place a dollop of sour cream, scallions, and pork rinds on top of each mini potato. Enjoy!
