Bite-Sized Pork Rind Baked Potatoes

Mini Baked Potato

Ingredients


• 1/4 cup Southern Recipe Small Batch pork rinds, crushed

• 1 Bag Potatoes, baby

• 2 Tbsp. Olive oil

• Salt and pepper, to taste

• 1/2 cup Sour cream

• 1/4 cup Scallions, finely diced



Directions


1. Preheat oven or air fryer to 425°F.

2. Toss baby potatoes with olive oil, salt, and pepper.

3. Place on a baking sheet or in air fryer. Cook 30-40 minutes, until crispy and cooked through.

4. Cool slightly. Cut a slit in top of each potato.

5. Top each with sour cream, scallions, and pork rinds.
