Parmesan Sweet Potato Bites

Ingredients
• 2 cups Southern Recipe Small Batch Sea Salt & Cracked Black Pepper pork rinds, crushed
• 4 Potatoes, sweet, baked, peeled, mashed
• 1/2 cup Parmesan cheese, grated
• 1/2 cup Monterey Jack cheese, shredded
• 1 Tbsp. Paprika
• 1/2 Tbsp. Onion powder
• 1/2 Tbsp. Garlic powder
• Salt, to taste
• 2 Tbsp. Olive oil
Directions
1. Preheat oven to 425°F. Line a baking sheet with parchment paper.
2. In a bowl, mix sweet potatoes with Parmesan and Monterey Jack cheeses.
3. In a shallow dish, combine pork rinds, paprika, onion powder, and garlic powder.
4. Using a small scoop, form sweet potato mixture into balls.
5. Roll each ball in pork rind mixture to coat. Place on prepared baking sheet.
6. Gently shape balls into squares. Brush with olive oil.
7. Bake 30 minutes, turning halfway through, until golden brown.
8. Sprinkle with salt before serving, if desired.
