Pimento Cheese Pork Rind Croquettes

Ingredients
• Southern Recipe Small Batch Sea Salt & Cracked Black Pepper pork rinds, crushed
• 2 cups Cheddar cheese, sharp, shredded
• 2 Eggs, divided
• 1/2 tsp. Lemon juice
• 1/2 tsp. Hot sauce
• 1 tsp. Pimento peppers, red, diced
• 2 Tbsp. Cornstarch, divided
• 1 Tbsp. Water
• Oil, for frying
Directions
1. In a bowl, mix cheddar cheese, 1 egg, lemon juice, hot sauce, pimento peppers, and 1 Tbsp. cornstarch until soft dough forms.
2. Roll dough into small balls. Freeze 10 minutes, until firm.
3. Place crushed pork rinds in one shallow bowl. In a second bowl, whisk remaining egg with water. In a third bowl, add remaining 1 Tbsp. cornstarch.
4. Coat cheese balls first in cornstarch, then egg wash, then pork rinds.
5. Heat oil in a frying pan over high heat. Fry cheese balls 30-60 seconds per side, until golden brown.
6. Drain on paper towels. Serve hot with dipping sauce or hot sauce.
