Pizza Dip Nachos - Pork Rind-Style

Ingredients


• 2 bags Southern Recipe Small Batch Pork Rinds

• 4–6 medium Vine-ripe tomatoes

• 2 cups Cherry tomatoes

• 1 Red bell pepper

• 1 Tbsp. Extra virgin olive oil

• 1/2 tsp. Kosher salt

• 3/4–1 cup Fresh mozzarella pearls

• 1/2 cup Sliced pepperoni

• 1/4 cup Parmesan cheese, shaved

• 1/2 cup Pickled Italian peppers

• 1 bunch Fresh herbs (basil, oregano, or parsley)



Directions


1. Preheat oven or grill to high heat.

2. In a cast-iron skillet, add tomatoes and red bell pepper. Drizzle with olive oil and sprinkle with salt.

3. Roast or grill for 10–15 minutes until the skins blister and the vegetables are soft and caramelized.

4. Remove from heat, discard the pepper stem, and smash the tomatoes and pepper together to create a chunky sauce.

5. Stir in mozzarella pearls, sliced pepperoni, and shaved Parmesan.

6. Return skillet to the oven until the mixture is bubbling, the cheese is melted, and the pepperoni is slightly crisp.

7. Remove from the oven and top with pickled Italian peppers and freshly chopped herbs.

8. Serve hot, either straight from the cast-iron skillet or spooned over your favorite Southern Recipe Small Batch Pork Rinds for dipping.
