Pork Rind Breakfast Casserole

Ingredients
• 1 bag Southern Recipe Small Batch Sea Salt & Cracked Black Pepper Pork Rinds, crumbled
• 1/4 stick Butter
• 1/2 cup Heavy cream
• 6 Eggs
• 3/4 cup Green peppers, diced
• 1/2 cup Onions, diced
• 1 cup Mushrooms, sliced
• Pinch of Dill
• 1 roll Sage breakfast sausage (or 2 cups diced ham)
• 2 cups Sharp cheddar cheese, shredded
• Salt and pepper, to taste
Directions
1. Preheat oven to 375°F.
2. In a medium bowl, whisk eggs and heavy cream until smooth.
3. In a skillet, cook sausage (or ham) with peppers, onions, and mushrooms until fully cooked.
4. Butter the inside of a baking dish. Add the cooked meat and vegetables, then pour egg mixture over top.
5. Stir in dill, salt, and pepper, and top with shredded cheese.
6. Sprinkle crushed Southern Recipe Small Batch Pork Rinds evenly across the top.
7. Bake for 30 minutes, or until the casserole is golden and set in the center.
8. Serve warm and enjoy!
