Ingredients
• 1 cup Southern Recipe Small Batch Pork Rinds, crushed
• 2/3 cup Mozzarella cheese, shredded
• 2 Eggs
Optional:
• 1/3 cup Applesauce
• Chopped pecans
• Powdered sugar
Directions
1. Preheat waffle iron.
2. In a bowl, beat eggs, then mix with crushed pork rinds and shredded cheese until combined.
3. Grease the waffle iron generously, pour in batter, and cook until golden brown.
4. (Optional) Mix applesauce into the batter before cooking for a touch of sweetness.
5. Top with chopped pecans and a dusting of powdered sugar before serving.
