Pork Rind Crusted Pollock

It’s a little fishy that you haven't tried this Pork Rind Crusted Pollock. Low carbs and a big flavor crunch will get you hook, line and sinker.

Ingredients
• Southern Recipe Small Batch pork rinds, crushed
• 2 Fillets Pollock
• 1 Egg
• 1/8 cup Water or almond milk
• Salt and pepper, to taste
• Olive oil
• Blackberries, optional garnish
Directions
1. Preheat oven to 400°F. Line a baking sheet with parchment paper and lightly brush with olive oil.
2. In a bowl, mix pork rinds, pollock, egg, water or almond milk, salt, and pepper until combined.
3. Form mixture into 1 1/2" balls. Place on prepared baking sheet.
4. Bake 15-20 minutes, until golden brown and cooked through.
5. Garnish with blackberries, if desired.
