Pork Rind Fried Green Tomatoes

Could we have Southern Recipe in our name without having a go-to recipe for Fried Green Tomatoes? Absolutely not. This one is enhanced by the savory, bold taste and crunch of our pork rinds.

Ingredients
• 2 cups Southern Recipe Small Batch Pork Rinds, finely crushed
• ¼ cup Butter or vegetable oil
• 3 Green tomatoes
• ¾ cup Almond milk
• ¾ cup Flour
• 2 Eggs, whisked
• Your favorite relish or salsa, for topping
Directions
1. **Prep the Coating Stations:**
Place almond milk, flour, crushed pork rinds, and whisked eggs into separate shallow dishes.
2. **Slice the Tomatoes:**
Cut green tomatoes into thick slices, about ½ inch thick.
3. **Coat the Tomatoes:**
Dip each tomato slice in the almond milk, then dredge in flour. Next, dip in egg, and finish by coating in crushed pork rinds.
4. **Fry to Perfection:**
In a large skillet, heat butter or oil over medium-high heat. Fry each tomato slice for 3–4 minutes per side, until golden brown.
5. **Drain & Serve:**
Remove from pan and drain on paper towels. Serve hot, topped with relish or salsa for an extra kick.
