Pork Rind Honey Cauliflower Bites

Ingredients
• 1 bag Southern Recipe Small Batch Pork Rinds, crushed
• 4 Eggs
• 2 Avocados
Chile-Style
• 1 Tbsp. Chili powder
Guac-Style
• 2 tsp. Onion powder
• 2 tsp. Garlic powder
• 2 tsp. Dried cilantro
Dipping Sauce
• 1 cup Keto mayonnaise
• 1/4 cup Sriracha
Directions
1. Preheat oven to 400°F.
2. Cut cauliflower into bite-sized pieces.
3. In a bowl, beat 3 Eggs with 2 Tbsp. water to make an egg wash.
4. Dredge cauliflower in flour, then dip in egg wash, and coat with crushed pork rinds.
5. Place on a baking sheet and bake for 20 minutes.
6. In a small bowl, mix 1 Tbsp. cornstarch with 1/4 cup water.
7. In a saucepan over medium heat, combine 1/2 cup soy sauce, 1 Tbsp. garlic, 2 Tbsp. honey, and 1/4 cup Sriracha. Bring to a simmer.
8. Stir in the cornstarch mixture and cook for 2 minutes, until thickened.
9. Add baked cauliflower to the saucepan and coat thoroughly in sauce.
10. Return coated cauliflower to the baking sheet and bake for 2 additional minutes at 400°F.
11. Serve with dipping sauce and optional chile-style or guac-style seasoning.
