Pork Rind Keto Breaded Shrimp

Ingredients
• 4 oz Southern Recipe Small Batch Pork Rinds, finely crushed
• 16 oz Jumbo shrimp, peeled and deveined
• 1 Egg, beaten
• 1/4 cup Parmesan cheese, grated
• Olive oil spray
Directions
1. Preheat oven to 450°F. Lightly coat a baking sheet with olive oil spray and set aside.
2. In a medium bowl, combine crushed pork rinds and Parmesan cheese.
3. Place the beaten egg in a separate small bowl.
4. Working one shrimp at a time, dip into the egg, then coat evenly in the pork rind mixture.
5. Arrange coated shrimp on the prepared baking sheet and lightly spray with olive oil.
6. Bake for 10 minutes, or until shrimp are golden and cooked through.
