Pork Rind Summer Fritters

Veggie Sliders

Ingredients


• 1/3 cup Southern Recipe Small Batch Pork Rinds, crushed

• 1 cup Cottage cheese

• 2 Eggs

• 1/2 cup Parsley, freshly chopped

• 1 tsp. Lemon zest

• 1/2 tsp. Salt

• 1/2 tsp. Black pepper

• 1 tsp. Garlic powder

• 1 tsp. Baking powder

• 1 1/2 cups Frozen peas

• 8 Tbsp. Vegetable oil

• Creamy dressing, optional



Directions


1. In a large bowl, combine all ingredients except vegetable oil and dressing.

2. Heat 2 Tbsp. oil in a cast iron pan over medium heat.

3. Scoop about 1 ice cream scoop of batter into the pan and flatten slightly.

4. Cook 3–5 minutes per side.

– If fritters fall apart, bake in oven at 400 °F for 10 minutes per side.

5. Repeat until batter is used up, adding more oil as needed.

6. Serve with creamy dressing, if desired.
