Pork Rind Summer Fritters



Veggie Sliders

Ingredients:

  • 1/3 cup Southern Recipe Small Batch Pork Rinds, crushed

  • 1 cup Cottage cheese

  • 2 Eggs

  • 1/2 cup Parsley, freshly chopped

  • 1 tsp. Lemon zest

  • 1/2 tsp. Salt

  • 1/2 tsp. Black pepper

  • 1 tsp. Garlic powder

  • 1 tsp. Baking powder

  • 1 1/2 cups Frozen peas

  • 8 Tbsp. Vegetable oil

  • Creamy dressing (optional)

Directions:

  1. In a large bowl, combine all of the ingredients except for the vegetable oil and creamy dressing. Set aside.

  2. Heat a large cast iron pan with about 2 tablespoons of oil over medium heat.

  3. Scoop about one ice cream scoop full of batter into the pan, flattening it out a bit.

  4. Let cook for about 3-5 minutes before flipping to the other side. If the batter falls apart in the cast iron pan, cook the fritters in the oven, set to 400 °F, for about 10 minutes per side.

  5. Continue to repeat steps 3 and 4 until the batter is gone. Add more oil as needed.

  6. Enjoy with your favorite creamy dressing.
