Ingredients:
1/3 cup Southern Recipe Small Batch Pork Rinds, crushed
1 cup Cottage cheese
2 Eggs
1/2 cup Parsley, freshly chopped
1 tsp. Lemon zest
1/2 tsp. Salt
1/2 tsp. Black pepper
1 tsp. Garlic powder
1 tsp. Baking powder
1 1/2 cups Frozen peas
8 Tbsp. Vegetable oil
Creamy dressing (optional)
Directions:
In a large bowl, combine all of the ingredients except for the vegetable oil and creamy dressing. Set aside.
Heat a large cast iron pan with about 2 tablespoons of oil over medium heat.
Scoop about one ice cream scoop full of batter into the pan, flattening it out a bit.
Let cook for about 3-5 minutes before flipping to the other side. If the batter falls apart in the cast iron pan, cook the fritters in the oven, set to 400 °F, for about 10 minutes per side.
Continue to repeat steps 3 and 4 until the batter is gone. Add more oil as needed.
Enjoy with your favorite creamy dressing.
Can I use okra instead of peas I those pork rind croquettes.
