Pork Rind Sushi Bowl

Ingredients
• 1 Tbsp. Southern Recipe Small Batch Sea Salt & Cracked Black Pepper pork rinds, crushed
• 1 Carrot, grated
• 1/4 cup Cucumber, sliced
• 3 slices Salmon, cooked, rolled
• Bean sprouts, small pinch
• 2 Radishes, sliced
• 2 cups Cauliflower rice, steamed
• Sriracha mayo, optional, drizzled
Directions
1. Steam cauliflower rice according to package directions.
2. Place cauliflower rice in bottom of serving bowl.
3. Arrange carrot, cucumber, salmon, bean sprouts, and radishes around rim of bowl.
4. Sprinkle pork rinds in center.
5. Drizzle with sriracha mayo, if desired.
