Pork Rind Zucchini Fries

Ingredients
• 1 cup Southern Recipe Small Batch Pork Rinds, crushed
• 2 Medium zucchini
• 2 Eggs
• ¼ cup Heavy cream
Spicy Dipping Sauce
• ¼ cup Mayonnaise
• Sriracha hot sauce, to taste
Directions
1. **Preheat:**
Set oven to 400°F and line a baking sheet with parchment paper.
2. **Prep the Zucchini:**
Cut zucchini into fry-sized sticks, leaving some of the peel on for texture.
3. **Make the Coating:**
Whisk eggs and heavy cream in one bowl. Add crushed pork rinds to another bowl.
4. **Coat the Fries:**
Dip each zucchini stick into the egg wash, then roll in crushed pork rinds until well coated.
5. **Bake:**
Arrange on the baking sheet and bake for about 15 minutes, or until golden and crispy on the edges.
6. **Mix the Sauce:**
Combine mayonnaise and sriracha in a small bowl. Adjust spice level to your taste.
7. **Serve:**
