1/4 cup Southern Recipe Small Batch Pork Rinds, crushed
1/2 cup Parmesan cheese, shredded
2 Tbsp. almond flour
1/2 tsp. dried parsley
1/8 tsp. garlic powder
1/2 large egg
1/2 tsp., Sriracha sauce
1 zucchini, sliced diagonally 1/4-inch thick (about 7 ½-8 ounces)
4 slices mozzarella cheese (optional)
1/4 cup marinara sauce
4 Tbsp. ranch dressing
Combine the first seven ingredients in a bowl. Stir to mix well.
Slice zucchini diagonally into 1/4-inch slices. You’ll need eight pieces about 2 1/2 to 3-inches long.
Beat egg in a bowl with Sriracha Sauce.
Dip zucchini slices into egg, then sprinkle both sides with breading. Press breading into the zucchini. Spray slices with olive oil cooking spray and place on a nonstick foil-lined baking sheet. Bake in a 425 oven for 17 minutes. Flip to the second side and bake for five more minutes. Add cheese slices to the top of the breaded zucchini. Cook until cheese is melted. Serve piping hot.
