Pork Rind Zucchini Zingers

Ingredients


• 1/4 cup Southern Recipe Small Batch Pork Rinds, crushed

• 1/2 cup Parmesan cheese, shredded

• 2 Tbsp. Almond flour

• 1/2 tsp. Dried parsley

• 1/8 tsp. Garlic powder

• 1/2 Egg, beaten

• 1/2 tsp. Sriracha sauce

• 1 Zucchini, sliced diagonally 1/4-inch thick (about 7–8 oz.)

• 4 slices Mozzarella cheese (optional)


Garnish

• 1/4 cup Marinara sauce

• 4 Tbsp. Ranch dressing



Directions


1. Preheat oven to 425°F and line a baking sheet with nonstick foil.

2. In a small bowl, combine pork rinds, Parmesan, almond flour, parsley, and garlic powder. Stir well.

3. In another bowl, beat egg with Sriracha sauce.

4. Dip each zucchini slice into the egg mixture, then coat both sides with the pork rind mixture, pressing gently to adhere.

5. Place coated zucchini slices on the baking sheet and spray lightly with olive oil cooking spray.

6. Bake for 17 minutes, flip, and bake an additional 5 minutes.

7. (Optional) Top each slice with mozzarella and bake until melted.

8. Serve hot with marinara and ranch for dipping.
