1/2 cup southern recipe small batch pork rinds, crushed 2 lbs. lean ground beef 2 eggs 2 tbsp. worcestershire sauce 1/2 large onion, minced 3 celery stalks, diced 1/2 cup sugar-free ketchup 1 tbsp. creole seasoning 1 tsp. greek seasoning 1 tbsp. garlic powder Sauce: 3 tbsp. tomato paste 1 cup sugar-free ketchup
1. Preheat the oven to 350 °F.
2. Mix all ingredients.
3. Form into a loaf and place in a bread pan.
4. Bake for 45 minutes.
5. While meatloaf bakes, mix tomato paste and sugar-free ketchup to make the glaze.
6. Coat cooked meatloaf with glaze.
