Buffalo Cauliflower Bites with Pork Rinds

Ingredients


For the Cauliflower:

• 1/2 cup Southern Recipe Small Batch pork rinds, crushed

• 1/3 cup Buffalo wing sauce

• 1/4 cup Cornstarch

• 1/4 tsp. Baking powder

• 1/2 cup + 2 Tbsp. Seltzer, cold

• 1 Head Cauliflower, cut into bite-sized pieces


For the Dip:

• 3/4 cup Sour cream

• 2 tsp. Lemon juice

• 1/4 tsp. Salt

• 1/4 tsp. Black pepper

• 1 tsp. Buffalo wing sauce

• 1 Scallion, finely chopped

• 1/4 cup Blue cheese, crumbles



Directions


1. In a bowl, whisk pork rinds, cornstarch, baking powder, and seltzer until combined.

2. Dip cauliflower pieces into batter.

3. Place battered cauliflower in a greased air fryer. Cook at 400°F for 10 minutes, until golden brown.

4. Transfer to a plate. Brush each piece with buffalo wing sauce.

5. In a small bowl, mix sour cream, lemon juice, salt, black pepper, buffalo wing sauce, scallion, and blue cheese to make dip.

6. Serve cauliflower bites with dip.
