Buffalo Cauliflower Bites

Buffalo Cauliflower Bites with Pork Rinds


For Cauliflower:

  • 1/2 cup Southern Recipe Small Batch Pork Rinds, crushed

  • 1/3 cup Buffalo wing sauce

  • 1/4 cup Cornstarch

  • 1/4 tsp. Baking powder

  • 1/2 cup + 2 Tbsp. Cold seltzer

  • 1 head of Cauliflower, cut into bite-sized pieces

For Dip:

  • 3/4 cup Sour cream

  • 2 tsp. Lemon juice

  • 1/4 tsp. Salt

  • 1/4 tsp. Black pepper

  • 1 tsp. Buffalo wing sauce

  • 1 Scallion, finely chopped

  • 1/4 cup Blue cheese crumbles


  1. In a medium bowl, combine the Southern Recipe Small Batch Pork Rinds, cornstarch, baking powder, and seltzer. Whisk until completely combined.

  2. Dip cauliflower pieces into the batter.

  3. Place battered cauliflower bites into a greased air fryer. Cook for 10 minutes at 400 °F.

  4. Once golden brown, place the cauliflower bites on a plate. Slather each piece with your favorite buffalo wing sauce.

  5. Create the dip by mixing all of the ingredients in a small bowl.
