Spring Pea Linguini

Ingredients
• Southern Recipe Small Batch Hot Honey Sweet BBQ pork rinds, crushed
• 1/2 box Pasta, linguini, cooked (reserve 1 cup pasta water)
• 2 cups Peas, green, divided
• 4 Tbsp. Olive oil, divided
• 1 tsp. Garlic, minced
• 1 Lemon, zest
• 1 cup Chicken broth
Directions
1. Puree 1 cup peas with 2 Tbsp. olive oil. Set aside.
2. In a large skillet, heat 2 Tbsp. olive oil over low heat. Add garlic and lemon zest. Sauté, stirring continuously.
3. Add chicken broth, pea puree, and reserved pasta water. Simmer 10 minutes.
4. Add cooked pasta and remaining 1 cup peas. Toss until pasta is coated.
5. Top with crushed pork rinds before serving.
