Pork Rind Pizza Cups




Charcuterie

Ingredients:

  • 1 cup Southern Recipe Small Batch Pork Rinds, crushed 

  • 8 oz. Cream cheese, softened

  • 4 Eggs

  • 2 cups Italian cheese, shredded

  • 1⁄2 Tbsp. Italian spices

  • 1⁄2 Tbsp. Garlic powder


Filling:

  • 2 cups Pizza sauce

  • 1 cup Mozzarella cheese, shredded

  • 4-6 Pepperoni slices

  • 2 Strips bacon, cooked and chopped

  • Handful of Cherry tomatoes, sliced

  • 1 sprig fresh Basil, chopped

  • 1 Chicken breast, cooked and shredded

  • BBQ sauce, to taste.

Directions:

  1. Make this pizza crust recipe. Let cool.

  2. Fill each pizza cup with a spoonful of pizza sauce, followed by a layer of mozzarella cheese. 

  3. Top each pizza cup with the following toppings, to taste:

  4. BBQ Chicken: shredded chicken breast and BBQ sauce

  5. Meat-lovers: pepperoni and bacon

  6. Caprese: cherry tomatoes and basil

  7. Top each pizza cup with a bit more mozzarella cheese. 

  8. Bake for 15 minutes or until the cheese is melted and bubby. Enjoy!
