Pork Rind Pizza Cups

Ingredients


For the Crust:

• 1 cup Southern Recipe Small Batch pork rinds, crushed

• 8 oz. Cream cheese, softened

• 4 Eggs

• 2 cups Cheese, Italian, shredded

• 1/2 Tbsp. Italian spices

• 1/2 Tbsp. Garlic powder


For the Filling:

• 2 cups Pizza sauce

• 1 cup Mozzarella cheese, shredded

• 4-6 slices Pepperoni

• 2 strips Bacon, cooked, chopped

• 1/2 cup Tomatoes, cherry, sliced

• 1 sprig Basil, fresh, chopped

• 1 Chicken breast, cooked, shredded

• BBQ sauce, to taste



Directions


1. Preheat oven to 350°F. Prepare crust mixture with pork rinds, cream cheese, eggs, Italian cheese, Italian spices, and garlic powder. Spread into muffin tins to form cups. Bake until set. Let cool.

2. Fill each pizza cup with pizza sauce and mozzarella cheese.

3. Add toppings by type:

• BBQ Chicken: chicken and BBQ sauce

• Meat Lovers: pepperoni and bacon

• Caprese: cherry tomatoes and basil

4. Top each pizza cup with additional mozzarella cheese.

5. Bake 15 minutes, or until cheese is melted and bubbly.
