1 cup Southern Recipe Small Batch Pork Rinds, crushed
3 Large beefsteak tomatoes
1/2 cup Goat cheese crumbles
1/2 cup Fontina cheese (or mozzarella cheese), shredded
1/4 cup Fresh parsley, chopped
1 Tbsp. Olive oil
1 Tbsp. Minced garlic
2 pinches of Black pepper
Preheat oven to 400 °F
In a medium bowl, mix all of the ingredients together, except for the tomatoes. Set aside.
Cut the tops off of each tomato.
Using a spoon, core each of the tomatoes, taking out the insides so that the tomatoes are hollow.
Discard the tops and insides of the tomatoes or save for a fresh salsa recipe!
Spoon the pork rind cheese mixture into each cored tomato.
Place the tomatoes on a baking sheet and bake for 20 minutes, or until the tomatoes are softened and golden brown.
