Pork Rind Stuffed Tomatoes

Ingredients
• 1 cup Southern Recipe Small Batch Pork Rinds, crushed
• 3 Large beefsteak tomatoes
• 1/2 cup Goat cheese crumbles
• 1/2 cup Fontina or mozzarella cheese, shredded
• 1/4 cup Fresh parsley, chopped
• 1 Tbsp. Olive oil
• 1 Tbsp. Garlic, minced
• 2 pinches Black pepper
Directions
1. Preheat oven to 400°F.
2. In a medium bowl, mix pork rinds, cheeses, parsley, olive oil, garlic, and black pepper until well combined. Set aside.
3. Cut the tops off each tomato and carefully scoop out the insides with a spoon, leaving hollow shells.
4. Spoon the pork rind and cheese mixture into each tomato until full.
5. Place stuffed tomatoes on a baking sheet and bake for 20 minutes, or until softened and golden brown.
6. Serve warm and enjoy!
